So I made chicken and rice, green bean casserole, and some garlic bread for dinner. Garlic bread was frozen but the rest was "scratch". I got a family size box of the Zataran's yellow rice, about 1-1.5lbs of chicken breasts (boneless, skinless), a sweet yellow onion, three cans of green beans, two cans of cream of onion soup, cheddar cheese, and a container of french fried onions. I put the rice on to boil first, because it takes awhile. I cubed up my chicken breasts (and onion) and started to cook them at the same time. I also preheated my oven to 425*. I cook my chicken funny, people laugh but I don't like frying if I can help it. I put a little water in a skillet, enough to barely cover the bottom of it, and then put my chicken in and season. It basically "boils" the chicken and makes a little "broth" that's seasoning rich also. I seasoned with Tony Chachere (creole seasoning), lemon pepper, pepper, garlic powder, onion powder, and a couple dashes of hot sauce. I let my chicken get about halfway cooked then add in the onion and cook it the rest of the way together. Cook until done, I usually have a little liquid leftover in the pan and that's fine. By this point your rice should be done. I pour the pan of chicken and onion into the rice, liquid and all. Stir well. When the oven preheats, I put the three cans of green beans in an 8x8 glass casserole dish (use whatever you have though) with the cream of onion soups and about a cup of cheddar cheese. Bake in oven for about 20 minutes or until thoroughly heated and bubbly on the sides. Pull it out, stir it up and put the french onions on top. Bake about 5-7 more minutes until the onions are brown but be careful not to scorch them. When that was done I baked my bread according to box directions. The whole thing took about 30 minutes. Here's a pic, and we have PLENTY of leftovers and we fed two adults and two kids.
